I've eaten BBQ all over the country and have come to the conclusion that there are only two types of BBQ resturant's. Good ones and average ones. In my opinion 75% of BBQ joints are average. Anyone can buy an automated smoker and make average BBQ. It's happening every day.
What makes the other 25% that much better? Having some creativity. When everyone is cooking butts, brisket and ribs being creative is the best way to stand out.
